Q:  What is a side of beef?
     
       A:
A side of beef is half of the steer/ heifer from head to tail.  A side of beef will feed
            an average family of four for about a year and will provide a full range of beef
            cuts such as: steaks, roasts, and ground beef. 

Q:   What happens after I decide to purchase?

       A:
Once you've decided to purchase, you will have to choose a payment option (see
          
Pricing).  When your beef is taken to slaughter, we will provide you with a
           questionnaire from the butcher about your cuts.  You will need to have some idea
           about what kinds of cuts you will want. 
          
How thick do you want your steaks?  We suggest at least 3/4" thick. 
          
How thick do you want your  roasts 2" or 3" and how many pounds?
          
Do you want flank steak? Flank steak comes from the short plate (the underside
           near the ribs) and some people really like it.  If you don't want flank steak, you
           can have it made into hamburger.
          
Filet steaks and New York Strip are boneless cuts of T-bones. If you want
           such a cut, you will need to make sure you ask for it. 
          
From the rib loin we get our rib roasts and rib steaks. You will need
           to decide if you want  a prime rib roast, rib steaks or both a roast and steaks.
         
You will also have the option of keeping soup bones and the organ meats.
         
          The beef will be slaughtered and then aged for 14 days before it is cut and wrapped
          Aging  improves the flavor and tenderness of the meat.  Once cut and wrapped, it is
          flash frozen and ready for delivery.  We will deliver beef to the Parker area at no
          additional charge.  We will deliver to other areas in Colorado for additional shipping
          and handling.

Q:   How many pounds of meat will I get?

      A:
Typically, we sell sides of beef although we have quarters and full beef available
           for purchase.  A 1200 pound steer/ heifer, will yield approximately 500 pounds                   of  retail cuts.  A side of beef will therefore yield about 250 pounds of retail cuts.
          

Q:  How many pounds of hamburger will I get from a side of beef?

     A:
Using the example above, of the 250 pounds of meat, 20 to 25% will be hamburger.
         So, a typical side of beef will provide a family with about 50 to 60 pounds of     
         hamburger.

Q:  Can I have my meat trimmed lean and request lean hamburger?

     A:
Yes, and usually at little or no additional cost.
